Brunch has rules, apparently. Eggs something. Toast something. A pastry basket that peaked in 2015. We'd like to submit a formal amendment: the churro belongs at brunch, and here are four ways to seat it at the table.
1. The churro pancake stack sidecar
Warm cinnamon Churro Bites piled next to (or on top of) a short stack, sharing the same maple syrup. The crispy ridges hold syrup better than the pancake does. This is not a competition, but the churro wins it.
2. The yogurt bowl upgrade
Vanilla bites over Greek or coconut yogurt with berries and a drizzle of honey. Crunchy, warm, cold, creamy — a parfait with actual personality. Also quietly one of the more balanced things on any brunch table: 1g sugar per bite, remember.
3. Café con churros
The old-world classic, minimally adapted: chocolate bites plus strong coffee, dipping encouraged. Spain has been right about this for centuries. We're just making it available in five minutes from your freezer.
4. The brunch board finale
Hosting? End the meal with a warm churro plate and three dips as the "dessert course of brunch," a concept that shouldn't be controversial and yet. It sends people home happy — and awake, because there's no sugar-crash nap in their future.
All three flavors pull brunch duty, which is the Variety 3-Pack's whole résumé. Make a brunch thing of it and tag @craverlyy #CraveBetter.
